Hi, I’m Marlon! I’m passionate about both eating and cooking, and I bring a unique blend of flavors and traditions to the table. Originally from the Philippines but raised in Spain, my diverse background influences everything I do.
I’ve had the privilege of working in Michelin-starred restaurant, which has significantly enriched my culinary skills and deepened my commitment to respecting ingredients, minimizing waste, and promoting sustainability. These experiences have shaped my approach to cooking and my philosophy of using every part of an ingredient to create extraordinary dishes.
Now, as the head chef at Judges Lodging, I continue to explore and share my love for food through our restaurant. I also participate in food festivals such as Living North, the Great British Food Festival, and the York Food Festival. Each event is a reflection of my dedication to crafting memorable, delicious experiences and making a positive impact through sustainable and thoughtful cooking.
